Breaded Fish and Chips


Is there anything more traditional than fish on a Friday?

Not being a big fan of deep fried food, I opted to bread the fish fillets and cook in the oven.

The fish comes out beautifully flaky, with the crispy breaded exterior forming a seal around the fish and keeping it very moist.

I served the fish with buttered and minted peas along with some oven roasted chips.

A British favourite, and for a good reason - you simply cannot beat fish and chips!

Ingredients

for the Breaded Fish [serves 2] :
2 fillets of cod, approx 200g each
100 g plain flour, seasoned well
150 g breadcrumbs
1 egg, beaten
salt and pepper to season

served with minted buttered peas


for the Chips [serves 2] :
1 large Maris Piper potato, cut into chips
1 tbsp Dunn’s River Everyday seasoning
3 tbsp vegetable oil
salt & pepper to season

Method

for the Breaded Fish :
1) Preheat the oven to gas mark 6.
2) Leave the cod on the side to come to room temperature.
3) Prepare the 3 bowls of seasoned flour, beaten egg and and breadcrumbs
4) Dust the cod fillets, one at a time in the seasoned flour, wash all over in the egg and then coat all over with the breadcrumbs. Once breaded, set on an oven tray. Repeat with the second fillet.
5) Cook for 30-35 minutess until crispy golden brown.
6) I served the fish with buttered minted peas.

for the Chips :
1) Preheat the oven to gas mark 6.
2) Place the oil onto an oven tray
3) Place the potato chips onto the tray and mix with your fingers to coat all the chips in oil.
4) Season with salt and pepper.
5) Sprinkle over the Everyday Seasoning.
6) Place in the oven and cook for 40 minutes, before flipping over and cook for a further 10 until golden brown.
7) Remove and place on kitchen roll. Pat dry, season, and serve. (I like mine sprinkled with malt vinegar).

Leave the cod on the side to warm to room temperature

Ready for the oven. If preparing in advance, place in the fridge at this stage
