Chipotle Chilli Chicken


Having finally unpacked the last boxes, after the epic house move, I was delighted to be finally back in the kitchen. For the record I have no intention of moving for at least another 10 years, and will most certainly not offer to wrap and box the contents of the house ever again.

As a result of the house move, I am now the proud owner of a gas fired BBQ.

Generally, I am a fan of all things charcoal when it comes to BBQ’ing, however, I have been swayed over the years from my sisters-in-law in New Zealand and Oz that quick al fresco cooking is worthwhile.

So, last night I wanted to create something with Chipotle chilli. I have become totally addicted to the smokey flavour and slight punch these chillies give. Combined with the lime juice and cumin I wanted to achieve a real Mexicana feel.

The kebabs were fantastic, moist and succulent but savoury and fresh with a delicate smokey taste followed by a tingling on the lips as the chilli mades itself known!

Totally delicious, and tasting even better for being eaten outside!

Chipotle Chilli Chicken : Wrap Close Up


Ingredients

for the Chipotle Chilli Chicken [serves 2] :
2 cloves of garlic
2 limes, juiced
1/2 dried chipotle chilli ground
1 tbsp fresh coriander, stems included
1 tbsp sea salt
1 tsp cumin
1 tsp coriander
1 tsp paprika
3 tbsp olive oil
1/2 red bell pepper
10 cherry tomatoes
1/2 red onion
2 chicken breasts, skin removed, diced into 2cm cubes

to garnish :
1/2 lime seared for a minute on the BBQ to char

for the fresh salad [serves 2] :
handful of leaves
1 yellow plum tomato, chopped roughly
1/4 cucumber, chopped roughly
1 tsp red wine vinegar
drizzle of good quality olive oil
salt and peper to taste

Method

for the Chipotle Chilli Chicken [serves 2] :
1) In a mortar and pestle, pound the chipotle chilli and sea salt until a fine powder.
2) Add the garlic cloves and pound well.
3) Add the fresh coriander, and dried coriander and juice of half a lime. Pound the paste well.
4) Add the cumin and pound for the last time.
5) In a mixing bowl, add the remaining lime juice, along with the paprika and cayenne pepper.
6) Add the chipotle paste, along with the olive oil.
7) Prepare the chicken and add to the marinade. Leave to marinade for 30 minutes or longer.
8) Prepare the kebab vegetables and soak the bamboo skewers.
9) Prepare the fresh salad, lime and coriander rice, guacamole.
10) When ready to cook, prepare the kebabs, skewering the chicken alternatively with the vegetables.
11) Cook the kebabs for 3-4 minutes, basting continuously.
(I warmed the tortilla up on the BBQ at this point, and kept warm in a clean tea towel).
12) Turn the kebabs, and continue to baste generously.
13) Remove the kebabs, and set on a serving tray.
14) Add the half lime to the grill and sear until caramelised.
15) Squeeze the lime over the chicken and serve immediately.

Add the coriander and lime

Chipotle Chilli Chicken : Add the Paprika and Cayenne Pepper

Add the paprika and cayenne pepper

Chipotle Chilli Chicken : Add the Cumin

Add the cumin powder

Chipotle Chilli Chicken : Mix the marinade together

Mix the marinade together

Chipotle Chilli Chicken : Bone the Chicken

Prepare the chicken

Chipotle Chilli Chicken : Leave to marinade

Set aside to marinade

Chipotle Chilli Chicken : Make the Fresh Salad

Prepare the fresh salad

Chipotle Chilli Chicken : Drizzle over the red wine vinegar and olive oil

Add the red wine vinegar, drizzle over the olive oil and season well. Toss the salad

Salad ready, set aside in the fridge till ready to serve
