Herby Chicken Bites


A sure fire week-day favourite. They only take 10 minutes to prepare, and then cook once marinaded.

These herby chicken bites combine a delicious Italian freshness with crispy succulent chicken.

I served these as standalone nibbles, but they would be equally good for a main meal.

Ingredients

for the Herby Chicken Bites [makes 12] :
2 cloves of garlic, peeled and finely diced
zest of a lemon
juice of a lemon
2 tbsp olive oil
1 hot red chilli, diced
handful of fresh oregano, chopped
handful of fresh parsley, chopped
handful of fresh thyme, chopped
12 chicken legs, skin slashed
1 tbsp dried mint
1 tbsp dried basil
1 tsp dried marjoram
good pinch of pepper
good pinch of salt


Method

for the Herby Chicken Bites :
1) Add all the ingredients in a freezer bag, and leave to marinade over night.
2) Preheat the oven to gas mark 6, 200C.
3) Cook the chicken for 50 minutes, turning half way.

Chop the herbs

Herby Chicken Bites : Add the dried herbs

Prepare the chicken by making slashes through the skin

Herby Chicken Bites : Marinade overnight
