Super Quick Chicken Bake


This meal was a store cupboard inspiration. It is cheap to make if you stick to using up leftovers!

I had a load of bits and bobs in the fridge, including half a roast chicken.

I had very little desire to cook, and the condensed soup was surprisingly tasty.

A great little recipe for when you need to be doing other things!

Quick Chicken Bake : Last One


Ingredients


for the Super Quick Chicken Bake [serves 4] :
75 ml white wine
75 ml chicken stock
1 tin of condensed chicken soup
1 tin of condensed mushroom soup
handful of chopped parsley
6 mushrooms, quartered
handful of green beans
handful of sugar snap peas
handful of tender stem broccoli, halved
1 tin of sweetcorn
4 spring onion, chopped into 2 cm pieces
1/2 red pepper, diced into 1 cm pieces
150 g or so of breadcrumbs (enough to generously cover)
half a cold roast chicken, diced into 2 cm pieces

Method

for the Super Quick Chicken Bake :
1) Preheat the oven to gas mark 6, 200C
2) Add the vegetables to a large oven proof dish.
3) Add the soup, white wine, chicken and chicken stock and mix well.
4) Generously sprinkle over the breadcrumbs.
5) Place in the oven for 50-60 minutes until crispy.


Eat immediately, but beware it will be nuclear hot!

Add the soup, stock and wine

Quick Chicken Bake : Add the chicken and stir well

Sprinkle over the chicken and mix well

Top generously with breadcrumbs
